This time of year, things start to pick up and we get BUSY! I'm always looking for ways to shortcut in my cooking to save time and money. When I first saw this 2 ingredient recipe on social media I didn't believe it. I don't even remember who posted it.
Then the other night we had a sweet craving and I haven't made it to the grocery store and I figured I give it a try.... and now I'm sharing with all of you!

Seriously, TWO INGREDIENTS.
- 1 pouch chocolate chip cookie mix (I prefer either Betty Crocker or Duncan Hines)
- 1 can pumpkin puree, 15oz.
I did make some minor tweaks (see notes after recipe), but here's what you do:
- Preheat oven to 350°.
- Grease an 8" or 9" square baking dish. (I just sprayed with Pam. You could probably use butter, shortening or parchment).
- In a medium mixing bowl, combine the cookie mix and pumpkin puree. I hand mixed with a spatula and it took me about 4 minutes.
- Spread mixture into baking dish evenly. Bake in oven for about 30-35 minutes. Toothpick inserted in center may bring out a few crumbs, but should not look wet.
- Enjoy!
**Now, I'm always a little extra with my baking and I wanted to bring out some more fall vibes. I measured with my heart some spices: Cinnamon (about 2tsp.), Nutmeg (1/2tsp), Cloves (1/4tsp). Honestly, you couldn't tell they were in there and I don't think it added anything to the flavor profile.
My husband thought I made this from scratch, and his request was "less chocolate next time"- but he is not a fan of chocolate at all. When I told him how I made it he was shocked. We were both surprised at how "cake-like" these bars turned out to be.
We did both agree that we think some chopped Pecans or walnuts would make a fantastic addition and we will try next time!
